Tim Bilton, our award-winning Chef and regular contributor to the Food and Drink section, has shared his recipe for a very easy to make and delicious Spiced Apple Cake.

Using ingredients from the store room cupboard and taking very little time at all to prepare, it can be served up warm or cold.

Spiced Apple Cake

100g Self Raising Flour
1/2tsp Mixed Spice
100g Castor Sugar
100g Margarine
2tbs Demerara Sugar
2tsp Mixed Spice
1/2 Lemon,juiced
2 Eggs
1 Bramley Apple
Icing Sugar

Grease and line a sandwich tin
Cream the margarine and sugar together
Add the eggs, one at a time
Fold in the sifted flour and mixed spice
Spoon into the cake tin and lightly spread out
Peel and core the apple and place into a bowl
Add the mixed spice, sugar and lemon juice
Stir together
Arrange the apples on the cake mixture

Bake at 180c for 20-25 minutes
Allow to cool
Turn out and sprinkle with icing sugar
