Tim Bilton, award-winning Chef and proud Yorkshire Man, has created a number of store cupboard classic recipes that are a great way of using up left over ingredients such as potatoes or sausages.

This one dish meal is quick, simple and economical to make, and with the added bonus of very little washing up to do at the end.

Full English Frittata

2 Cooked sausages, sliced chunky
4 Rashes of chopped Bacon
150g Mushrooms sliced or quartered
6 Leftover potatoes (bolied or roast)
8 Medium eggs
Drizzle of Olive oil, salt & pepper, pinch of chopped parsley

Sauté the bacon in a large deep sauté pan using a little olive oil, until golden brown, add the mushrooms and cook for a further 2 minutes.
(You can use a shallow pan and then transfer into a deep lined baking dish)

Add the tomatoes, sausages and potatoes and gently toss together.

In a bowl, whisk the eggs (a little milk can be added at this stage to make a lighter Frittata)

Add the chopped parsley and egg, stirring gently to mix all the ingredients together.

Place into a pre-heated oven at 180c until set and risen, approximately 15/20 minutes.

Turn out and enjoy this delicious meal.
