Tim is a chef, food writer, cancer fighter and family man and writes a very candid blog "On a knife edge".
Here is a dish that is quick to cook, however the trick to this recipe is to have everything prepared.
Vegetable Stir Fried Rice
300g Cooked rice, or 150g uncooked
1 Head of brocolli, cut into florets and blanched
6 Spring onions sliced
1 Red pepper thinly sliced
2 Garlic cloves, sliced or crushed
3 Eggs, beaten
Drizzle Vegetable oil
Splash Soy sauce
Splash Sesame Seed oil
Heat a wok or large non-stick frying pan.
Add a drizzle of vegetable oil and carefully place in the sliced peppers.
Cook for 2 minutes, stirring and moving the peppers all the time.
Add the garlic and spring onions and cook for a further 2 minutes.
Add the broccoli and peas.
Then add the cooked rice and continue to stir fry, until hot.
Mix the egg and Soy sauce together and add to the rice, stirring with a fork.
Season with salt and pepper and drizzle in the Sesame oil.
A quick tip - to enrich the dish add prawns, chicken or pork.
